Great films where nothing really happens.
I'm a big fan of movies with little to no plot, where you are really just spending time with interesting characters. I think all of these fall under that description; great movies where nothing really happens. Special mention to Richard Linklater for making an amazing career out of nothing!

@Del: Not yet, but it's been on my list for ages. It almost sounds like a Before Sunrise/Sunset kind of movie. Added.
@VHS: One of my favourite films, but I think it's a bit too action packed for what I am going for here.
@RQ: Do not know that one and can't really gauge whether it fits here. Can anyone else vouch?
@Jacob: Horrifyingly amazing! I absolutely love that movie. It is amazing how Korine takes you, throws you in the mud, and leaves you covered in filth by the end of the film.
@Adam: No idea how I forgot Festen; one of my favourite movies of all time. Not sure I want to get into adding short films, though Anadlaou and that segment from The Five Obstructions would fit for sure if I was. Adding the rest except for Visitor Q because I did not think it was great.; interesting and unusual, but not great. I was not a fan of Shame, but adding it due to my love of Fassbender and Mulligan (<3 <3).

The Station Agent. An absolute gem of a movie.
Sorry. Just spotted it on the list. I did just watch My Son, My Son, What have Ye Done though, and most of the actual content exists via storys being told to Willem Defoe
Yeah I do want to see that one, for Herzog and Shannon if for no other reason, but I've heard it's not really all that great of a movie. What did you think of it?
It's a hard one to pin down. Not a good Herzog but def worth checking out for Michael Shannon.
You could also add Once Upon A Time In Anatolia. Great movie though very little happens. It takes place pretty much over one night and the following morning as a towns authorities go searching for the body of local man.
A big YES to Once Upon A Time In Anatolia, another I didn't think about.
