Was about to recommend Cinemania but I see it's already on the list. That movie made me sad because I can definitely see myself ending up like the subjects of the film.

The Kid Stays in the Picture (2002) is worth a watch.
I was compiling something similar, but you're way ahead of me. Nollywood Babylon and The Rules of Film Noir were the only two I had not yet mentioned here.

Is The Magic Box on the list yet? It's not a documentary, but a narrative film about Britain's contribution to the invention of film.
