Wikipedia says that this film is stop-motion, and in my memory it was too, but surely it's 99% CGI? There's a handful of moments that look like physical models, generally when something a bit organic-looking is needed, like a bone. (EDIT: Having just watched one of the making-of featurettes, I stand corrected: it really is stop motion puppetry, it just doesn't look like it.)
Wikipedia says that Johnny Depp plays Victor, and the character certainly looks Depp-like. But he says so little that it seems like a waste of money to get a (then-)A-lister like him. Perhaps it was a "buy Bonham Carter, get Depp free" deal.
Wikipedia says that Corpse Bride got generally positive reviews. Sounds about right.
