I've spent surprisingly little time in Louisiana despite being from Northwest Florida. We had a lot of the same ingredients in Southern staples (though often fried, like okra) but an embarrassing lack of Cajun food. I didn't have decent gumbo until five years ago when I made it myself after watching "Always For Pleasure". Not to say it could compare to the ancient divination you see in these films, but compared to the swamp diarrhea Florida restaurants call Gumbo, it was magic in my mouth.
